Tagine of Kefta (Meatballs in Shermula Sauce)

1lbGround beef
1md Onion, finely chopped
½bn Coriander, chopped
½bn Parsley, chopped
1teaspoonSalt
1teaspoonWhite pepper
1tablespoonCumin
1tablespoonPaprika
½cupTomato paste
½cupChopped onion
1md Tomato, diced
½tablespoonGarlic
½tablespoonCumin
½tablespoonSalt
½tablespoonWhite pepper
½bn Parsley, chopped
1bn Coriander
2ouncesOlive oil
Combine beef, onion, corinader, parsley, salt, pepper, cumin and paprika.
Roll into meatballs. Brown and boil in shermula sauce until done. For
shermula sauce, combine remaining ingredients, bring to a boil and reduce
sauce until it reaches desired thickness.
