In a medium pot brown the turkey with the thyme, sage, and minced garlic. Once browned, remove from pot and set aside.
In the same pot, warm the olive oil over medium heat, then saute the onion, chopped garlic, shallot, and chipotle pepper until onions are translucent. Add chili powder, cayenne pepper, salt, and water. Reduce liquid by 1/2. Add tomato sauce and bring to a boil, then stir in beans and turkey. Simmer over medium-low heat for 1 hour, stirring occasionally. Add salt and ground pepper to taste. Serves 4-6. Sprinkle with condiments such as shredded cheese, green onion, fresh tomato or onion, and tortilla chips.
