Spicy Chipotle Chili

1poundground turkey
1teaspoondried thyme leaves
½teaspoondried sage leaves
3clovesgarlic, minced
2tablespoonsextra virgin olive oil
1small onion, chopped
2clovesgarlic, chopped
½shallot, chopped
1chipotle pepper, chopped
1tablespoonchili powder
½teaspooncayenne pepper
salt, to taste
1cupwater
1cantomato sauce, 15-oz.
1canblack beans, reduced salt, 16-oz., drained and rinsed
salt & pepper, to taste
In a medium pot brown the turkey with the thyme, sage, and minced garlic. Once browned, remove from pot and set aside.

In the same pot, warm the olive oil over medium heat, then saute the onion, chopped garlic, shallot, and chipotle pepper until onions are translucent.

Add chili powder, cayenne pepper, salt, and water. Reduce liquid by 1/2.

Add tomato sauce and bring to a boil, then stir in beans and turkey.

Simmer over medium-low heat for 1 hour, stirring occasionally. Add salt and ground pepper to taste.

Serves 4-6. Sprinkle with condiments such as shredded cheese, green onion, fresh tomato or onion, and tortilla chips.
Notes
I use a chile from a can of 'chipotle in adobo sauce'
